The British Museum's great court project saw the building’s historic Portland courtyard enclosed with a stunning glazed dome. A centrepiece to this structure were the foodservice amenities, including a visitor café and a table service restaurant developed by Tricon in partnership with the Architects. Tricon developed a business plan to identify the potential revenue to be generated from the catering operations and then invited caterers to proposal based on rental and/or concession agreements and a nil cost approach. The selection was based on the caterer’s ability to innovate, bring in fresh ideas, maintain quality and project best financial returns.
