The Wallace Collections’ courtyard is the stunning location of its glass roofed garden restaurant. Tricon had developed the strategy back in 2000, but some years on, the operation had drifted from the original intent and a re-appraisal was needed. Tricon was able to identify the shift in market position that led to a subsequent tender of potential new operators. Entrepreneurial flair and innovation was required to satisfy visitors to the Collection and attract casual diners, workers and residents, against some keen local competition. Today diners can enjoy classic French food in a modern, Brasserie setting.
